Pineapple Delight Poke Cake

This is my niece, Mackenzie’s, favorite cake to make! It is simple, moist, creamy and delicious! First thing, go ahead and drain your 20 oz can of crushed pineapple. We are going to use it in the cake batter and our pineapple-vanilla pudding layer. We used a box of Betty Crocker yellow cake and followed the directions, BUT we substituted 1 cup of pineapple juice for the 1 cup of water.

  • Betty Crocker Yellow Cake Mix

  • 3 eggs

  • 1 cup of the drained pineapple juice

  • 1/2 cup of oil

While that is baking, make your pineapple vanilla pudding layer. Mix:

  • 1 large box of instant vanilla pudding

  • 1/2 cup of the drained pineapple juice

  • 2 cups milk

  • 1 cup heavy whipping cream (you could do all milk)

    Then, fold in:

  • 1/2 cup cool whip or whipped cram

  • 20 oz can of crushed pineapples we drained earlier

Once the cake comes out, while still war, poke holes in it with a wooden spoon:

  • cover the cake with condensed milk

  • Then slather with that vanilla-pineapple pudding mix

  • And cover with cool whip
