Veggie Casserole

Slice up:

  • 2 potatoes

  • 1 zuchinni

  • 1 squash

  • 1 red onion

  • 1 red bellpepper

    Drizzle with Lemon White Balsamic Vinaigrette (seperate recipe with video)

  • 1/4 cup Extra Virgin Olive Oil

  • 1/8 cup freshly squeezed lemon juice

  • 1 tbsp white balsamic vineger

  • 1 1/2 tbsp dijon mustard

  • 1 tsp sugar

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 1/2 tsp dried oregano

Add topping:

  • 1 cup smoked gouda

  • 1/3 cup garlic and herb bread crumbs

  • 1/4 cup parsley

  • 2 tsp EVOO

    Cook at 375 for 40 minutes
