Crockpot Lasagna

It is so simple and makes weeknight dinners a breeze. Simply, brown up your meat with onion and garlic, add your canned crushed tomatoes and tomato sauce. Mix in your seasonings and meat sauce is done! For the white cheese mixture, mix ricotta, parmesan and mozzarella. Then just start layering in your crockpot starting with the meat sauce, break up those uncooked lasagna noodles, and add the white cheese mixture. I did 3 layers. I cooked on low for 3-4 hours or until noodles are tender. Before serving, melt on 1/2 cup of parmesan and mozzarella and serve.

Meat Sauce:

  • 1 pound lean ground meat

  • 1 onion

  • 2 cloves garlic

  • 28 oz can crushed tomatoes

  • 15 oz can of tomato sauce

  • 1 tbsp both basil and oregano

  • 1/4 tsp red pepper flakes

  • 1 tsp each of salt/pepper/garlic/onion powder

White Cheese Mixture:

  • 1 cup skim ricotta

  • 1/4 cup parmesan

  • 1 cup mozzarella

Crockpot:

  • 6 uncooked lasagna noodles

  • top with 1/2 cup of parmesan and mozzarella

I cooked for 4 hours which was too long so start checking those noodles at 3 hours.
