John Wayne Casserole

Cowboy layer:

  • Sauté 2 lbs lean ground beef

  • 1 teaspoon garlic powder/ onion powder

  • salt and pepper

  • 1 bellpepper,

  • 1 onion

  • the juice from the chiles and rotel

  • 1/3c water

  • 3 tablespoons taco seasoning

    White Cheese Layer:

  • 1 block fat free cream cheese

  • 2 tablespoons ranch

  • salt and pepper

  • 1 cup pepper jack

  • 1/2c fat free sour cream

  • 4 oz. green chiles

Topping:

  • 1 cup cheddar cheese

  • 1/4 cup pepper jack

  • Cilantro to garnish

To assemble the casserole:

  • Smush biscuits or cresent rolls in bottom of pan for the crust.

  • Layer on the meat and add a layer of the rotel

  • Cover with the white cheese layer

  • Top with 1 cup cheddar cheese and 1/4 cup pepper jack

  • Bake at 350 for 40 minutes, and then at 375 for 10 minutes

  • Add some cilantro to garnish
