It is a budget week for us! I found this 6.4 pound Pork Shoulder that I have planned for 3 dinners and lunches for 2 adults for the week.
Meal # 1 - Crockpot Carnitas
Meal #2 - BBQ Pulled Pork Sliders
Meal # 3 - Cheesy Pork over yellow rice
Rinse, Dry, and season meat really well. DON’T BE SHY! Get in there with some seasoning! Brown it in a pan with butter and oil on all sides.
Heat your crockpot up on high and cook that meat for 5-6 hours on high til its literally falling off the bone! The goal is 200 degrees to make it tender!
Before adding your meat, add the following to your CrockPot:
2 cans of green chiles
onion/bellpepper/and garlic (I did 5 cloves)
juice of 2 oranges and 2 limes
salt/pepper (yup - more seasoning)
2 tbsp of cumin
Once the meat is done, drop your tortillas in that juice, throw them in a pan to brown up, add cheese and your pork and fold/serve them once they get crunchy! These are simply heavenly!
